This edition is part of the Ki Noh Bi series, which is known for its cask-aged gins. The 2nd Edition has been aged in a cask that was previously used to mature Japanese Single Malt Whisky, although the specific distillery remains unknown. The gin is crafted with a base of rice spirit and features a blend of botanicals that are distilled separately before being combined to create the final product.

Tasting Note

Nose

The aroma is characterised by a blend of citrus notes, including yuzu and lemon, supported by green tea and pine-forward juniper.

Palate

On the palate, the gin presents a complex flavour profile with initial citrus notes of yuzu and freshly expressed orange oil. This is followed by juniper with a pine note, transitioning into earthy, herbal, and camphoraceous impressions. The mid-palate reveals notes of ginger, peppercorn, wormwood, and bitter black tea, leading to a long and exceptionally dry finish.

Finish

The finish is long and rounded, with lingering flavours of menthol, ginger, and a delicate interplay of yuzu and red shiso leaves, tied together by juniper.
