The Kyoto Ki Noh Bi ex-Karuizawa Cask Dry Gin 22nd Edition is a unique and limited release from the Kyoto Distillery, known for its innovative approach to gin-making. This edition is part of the Ki Noh Bi series, which is the first Japanese gin to collaborate with the traditional Noh Theatre. The 22nd edition features the Zo onna mask, representing a young woman with dignity and reserve, created by the famous dengaku dancer Zōami Hisatsugu.

This gin is a cask-aged version of the classic KI NO BI Kyoto Dry Gin. It has been aged in a combination of Karuizawa ex-sherry butts, Karuizawa ex-wine barrels, and new Mizunara casks. The maturation process is carefully monitored to ensure an optimal balance between the botanical flavours and the influence of the wood. The final blend is made with Fushimi water, known for its purity and quality.

Tasting Note

Nose

The aroma is rich with notes of candied ginger, dried fruit, and desiccated coconut, providing a sweet and inviting scent.

Palate

On the palate, the gin reveals complex layers of flavours. Initial notes of candied ginger and dried fruit are followed by rich oak, sweet caramel, and hints of delicate violet. The influence of the Mizunara casks adds a unique touch of sandalwood and Kyara, contributing to a deep and multifaceted flavour profile.

Finish

The finish is long and rounded, with a lingering sweetness and a subtle hint of violet, making it a memorable and sophisticated gin.
