The Kyoto Ki Noh Bi ex-Karuizawa Cask Dry Gin 16th Edition is a unique and special gin that represents a collaboration between Japanese whisky and Japanese gin. This edition is matured in ex-Karuizawa and Mizunara casks, marking the first-ever collaboration of its kind. The gin is part of the Ki Noh Bi series by the Kyoto Distillery, which is known for its innovative approach to gin-making and its use of traditional Japanese elements.

This particular release features the Yase Otoko mask, a Noh mask created in the 17th century, emphasising the distillery's connection to traditional Japanese performing arts. The 16th edition was released in 2020 and was bottled exclusively for Isetan, with only 800 bottles produced.

Tasting Note

Nose

The gin opens with a strong citrus presence, featuring notes of yuzu and lemon. There are also hints of green tea and pine-forward juniper, providing a clean and somewhat classic aroma.

Palate

The initial taste is dominated by citrus flavours, particularly yuzu and freshly expressed orange oil. This is followed by juniper with a pine note, transitioning into earthy, herbal, and camphoraceous impressions. The mid-palate introduces notes of ginger, peppercorn, wormwood, and bitter black tea, leading to a long and exceptionally dry finish.

Finish

The finish is characterised by a delicate interplay of yuzu and red shiso leaves, with juniper tying the flavours together. The gin has a long, crisp finish with lingering flavours that tail into a pleasant bitterness.
