Kyoto Ki No Bi 'SEI' Gin

KI NO BI SEI Kyoto Dry Gin is a high-proof variant of the original Ki No Bi gin, produced by the Kyoto Distillery, Japan's first dedicated gin distillery. The term "SEI" comes from the Kanji character "勢," meaning "power," reflecting the gin's robust nature. This version is bottled at 54.5% ABV, compared to the original's 45% ABV, aligning with the traditional British Navy Strength.

The gin is crafted using a rice spirit base and 11 botanicals, which are divided into six distinct flavour categories: base, citrus, tea, herbs, spices, and floral. These botanicals include juniper berries, orris root, hinoki (Japanese cypress), yuzu, lemon, ginger, green tea (Gyokuro), red shiso, bamboo leaves, and sansho pepper. Each category is macerated in rice alcohol and distilled separately before being blended and left to rest, allowing the flavours to harmonise.

Tasting Note

Nose

The nose is characterised by strong citrus notes, particularly yuzu and kumquat, supported by green tea and pine-forward juniper. There are also floral undertones with hints of black tea and pepper in the background.

Palate

The higher proof gives a punchy start on the palate, with a thicker mouthfeel and full-bodied flavour. The initial taste is dominated by citrus flavours, including yuzu and freshly expressed orange oil, followed by a mid-palate transition to earthy, herbal, and camphoraceous notes. The gin features layers of flavours, including ginger, peppercorn, wormwood, and bitter black tea, which provide a cooling and radiating effect.

Finish

The finish is long and exceptionally dry, with a delicate interplay of yuzu and red shiso leaves, tied together by juniper. There is a pleasant lingering bitterness, with notes of black pepper, Chinese basil, and a touch of heat from the ginger.
