This whisky is part of the distillery's "New Born" series, which showcases their early production efforts. The Foundation 2 release is peated and aged in bourbon barrels, bottled at a cask strength of 58% ABV. The distillery aims to create a whisky that mirrors the traditional Islay style, utilising local Hokkaido ingredients and the unique climate of the region, which includes frequent sea fog and a cool, moist environment.

Tasting Note

Nose

The aroma is delightful, featuring notes of strawberry, chocolate, yuzu citrus, cherries, and vanilla.

Palate

On the palate, it is mild with a slight peat influence, offering flavours of baked marshmallow, caramelised nuts, dried persimmon, and citrus.

Finish

The finish is balanced with a combination of malt and woodiness, with lingering notes of sandalwood and nutty banana bread.
